I can’t take full credit for this recipe as they were inspired by an article which I read in Runner’s World which listed all of the possible combinations for energy bites, but they were SO good that I couldn’t not share.

These quantities yield around 14 mini bites, which I find are amazing because you eat 5 and feel like you’ve been extravagant, but really it’s only about the same as one normal sized energy ball.

Ingredients 

250g dates

150g cashews

1tbsp tahini

1/2 tbp honey

1tbsp cacao powder (for dusting)

Method

  1. Blend your cashews in a food processor until they form a floury consistency before adding the rest of your ingredients (except the cacao powder)
  2. Blend together until you have a gooey consistency and form into balls using a tbsp as a size guide
  3. Roll in the cacao powder and leave to set in the fridge for at least an hour before tucking in

The great thing about these is that you can swap in different ingredients depending on what you have to hand – as long as you keep the proportions of the nuts, fruit and wet ingredients the same you’ll end up with some delicious combinations!
