Living in London the announcement of a tube strike elicits two thoughts:

1) Whyyyyyyyyyyyyyyyyyyyy?!

2) YUM, working from home means enough time to make a proper breakfast!

A typical weekday breakkie tends to be either a quick smoothie or porridge at my desk, so the opportunity to make something a little more delicious to sit and enjoy whilst watching the dog walkers and runners outside is something I relish.  Enter, Banana, Chia & Coconut Porridge, a creamy, filling take on the cupboard staple.

This was my first time using chia seeds, having had them in the larder for the past couple of months and I wanted a fairly simple recipe to mark the introduction of this Omega 3 fuelled seed into my cooking repertoire. The addition of chia was very subtle one, just slightly plumping the texture and adding a seedy, almost nutty crunch to one of my favourite breakfasts, perfectly offset by the ripe banana and fresh, sweet strawberries. Totally delicious!

Ingredients

1 tbsp chia seeds

1 tbsp dessicated coconut

1 cup almond milk

30g oats

1 banana

4 tbsp water

Strawberries (for topping)

Method

  1. Mix together the chia seeds and almond milk in a saucepan, leaving to soak for 5 minutes to allow the chia seeds to begin to swell
  1. Add in the chopped banana, desiccated coconut and oats, heating over a medium flame for 5 miuntes, or until the oats are softened. Add in the additional water if necessary, depending on how thick you like your porridge
  1. Serve in a pretty bowl, top with fresh strawberries, add an extra sprinkling of coconut and sit and watch the world go by…
