On the occasional days that I work from home I find myself nipping off to raid the larder every half an hour, hoping for some form of inspiration to keep me going as a plough on with the task at hand. As delicious as this all sounds, it’s not entirely conducive to a productive day, so when I was working from home a couple of weeks ago I set about making some energy balls at the start of the day to help curb my cupboard crawling. Using store cupboard staples I came up with these Banana Bread Energy Balls, which are tremendously gooey and extremely moreish – the perfect focus snack!
Ingredients
150g dates
3 tbsp oats
2 tbsp peanutbutter
1 ripe banana
½ tsp cinnamon
Dessicated coconut
Method
- Place your oats in a food processor and blend until you have a consistency slightly crumblier than flour
- Add your dates, peanut butter, banana and cinnamon and blend until all of your ingredients are combined. You’re aiming for a gooey consistency which is still roll-able
- Divide into 6 and shape into balls before rolling in your dessicated coconut and placing on greaseproof paper
- Pop the balls into the freezer for 30-45mins until set, before gobbling with a cup of tea
Whilst the endless supply of energy balls worked wonders for my food distractions, my little kitten Egg more than made up for them with her endless cuteness!
